Ingredients
- 2 pcs Purple Eggplant, halved and cut into pieces
- 2 red tomatoes, boiled, skin removed, finely chopped
- 12 red chilies, grind until smooth
- 2 cloves Garlic, sliced
- 4 red onions, sliced
- 1 tsp Brown Sugar
- 1 tsp Salt
- 1/4 tsp Chicken/beef/mushroom broth
- 250 ml Water
- Enough oil, for sauteing and frying
How to make
- For the sambal balado, boil the tomatoes and chilies. Remove and puree.
- Fry the eggplant that has been washed and cut into pieces until slightly cooked. If so, lift and drain for a moment.
- Pour oil in a frying pan and heat it. Then, add the onion and garlic, saute until fragrant.
- Add the chopped chilies and tomatoes. Then stir until everything is evenly mixed. Add water, brown sugar, salt, and seasoning. Stir again until the water begins to shrink.
- After the water begins to shrink, add the half-cooked eggplant. Stir until all the sambal balado seasonings are evenly mixed. Continue to cook until the balado spices are absorbed.
